Opened in 2015, the Guest Salon is a private room on the mezzanine floor, reserved exclusively for groups. Minimum 8, maximum 14 guests. Approximately 2 hours. Starts at 10:30, 13:00 or 15:30.

Our Story
Founded 8 October 1870
“The oldest and most famous pastry shop in Copenhagen — where every Danish child remembers their first visit.”
Six generations. The Sportskage unchanged since 1891. The 1924 mahogany rooms still in use today. Maria and Laura Stagetorn Kolos now writing the next chapter.

The History
Conditori La Glace
Skoubogade 3 · Copenhagen · Since 8 October 1870
1870
Founded
On 8 October, Nicolaus Henningsen opens a confectionary in the cellar of Skoubogade 3, naming it "Henningsen's Kælder". He was born in Schleswig in 1839, trained in Flensburg and arrived in Copenhagen in 1860 at the age of 21.
1876
The first widow takes over
Nicolaus Henningsen dies at the age of 37. His widow, Anina, takes over the business. She is said to have been "very beautiful, both in figure and face, with magnificent hair" — and a formidable businesswoman.
1891
The Sportskage is born
Created on 18 November 1891 for the theatre production "Sports Man" at Folketeatret on Nørregade. The recipe: crushed nougat, whipped cream, a macaroon bottom, and caramelised choux. It has not changed since.
1896
Renamed La Glace
Thorvald Schrøder expands the confectionary to include a grand ground floor tea room and renames it La Glace. The first telephone is installed: Central 4646. The first major modernisation in the house's history.
1924
The rooms we still use
The new shop premises at Skoubogade 3 are completed in a modern yet classicist style. The tables, chairs, mirrors and cabinets you see today are largely preserved from that renovation. The production building acquires electricity for the first time — including a cream whipper and ice cream maker both still in use over 100 years later.
1978
The Stagetorn family
Lawyer Ove Stagetorn purchases the property. Not wanting to close the confectionary, he persuades his wife, lawyer Merethe Stagetorn, to take over its management — despite having no commercial or culinary training. She succeeds.
1989
Marianne Stagetorn
Marianne Stagetorn buys La Glace at the age of 22 — the first female owner in the house's history. She completes a pastry chef qualification in 1993. She and her husband Peter Kolos have three children: Maria (1995), Andreas (1996), and Laura (1998).
2003
Lars Juul joins
Head Confectioner Lars Juul and Lead Cake Lady Malou Grønborg join La Glace. A slow but steady development begins. Lars leads all courses and the creative direction of the cake collection to this day.
2015
Expansion
The confectionary expands to nearly twice its original size. A mezzanine is added with 70 additional seats and the private Guest Salon. TV2 produces five seasons of Christmas programmes filmed here.
2025
The sixth generation
Maria Stagetorn Kolos (born 1995, degree in International Business and Marketing, pastry chef qualified 8 October 2024) and Laura Stagetorn Kolos-Lauritzen (born 1998, pastry chef qualified 8 October 2024) take over the business. The third generation of the Stagetorn Kolos family. The sixth generation overall in 155 years.
